  • 4 fresh strawberries, chopped

Simple Apple Walnut Salad recipe

Ingredients (makes 2 large plate salads or 4 side salads): 
  • Spinach (1/2 bag)

  • Poppy seed dressing, to taste




Lemon Garlic Shrimp Tostada recipe


This shrimp marinade was so good that I’m going to make it again for a pasta dish.  A healthy pasta dish of course. This amazing recipe I founded at http://www.azestybite.com/ and I love it. It's so fresh and healthy. Ideal for healthy lunch, enjoy :)

Ingredients:

1/2 pound large uncooked shrimp
1/2 teaspoon chopped garlic
1/4 cup olive oil
juice from 1 lemon
1/4 teaspoon salt
4 baked tostadas
1 avocado, diced
1 large tomato, diced
1 15 ounce can of black beans, cooked (add a pinch of salt to the beans)

FIRST LAYER:
In a small bowl, combine:
1 cup milk chocolate chips
1/4 cup creamy peanut butter
Heat in the microwave in two 30-second intervals, stirring after each. Stir until creamy and then pour the mixture in an even layer into the bottom of the prepared pan. Place the pan in the freezer.

SECOND LAYER:
In a medium saucepan, melt 4 tablespoons of butter over medium heat. 
Add:
1 cup sugar
1/4 cup evaporated milk
Stir and bring to a boil. Boil for 3 minutes, stirring constantly.
Remove from the heat and add:
1 1/2 cups marshmallow creme
1/4 cup creamy peanut butter
1 teaspoon vanilla
Stir until combined.
Add 1 cup of salted peanuts.
Stir until combined. Remove the pan from the freezer and pour the mixture in an even layer over the chocolate layer. Place back in the freezer.

THIRD LAYER:
In a small saucepan, add:
14-oz. bag caramels, unwrapped
1/4 cup evaporated milk
Cook over medium-low heat, stirring constantly, until the caramel is melted and smooth. You could do this step in the microwave instead, but for some reason I always prefer melting caramel on the stove.
Remove the pan from the freezer and pour the caramel over the top in an even layer. Place back in the freezer.

FOURTH LAYER:
In a small bowl, combine:
1 cup milk chocolate chips
1/4 cup creamy peanut butter
Heat in the microwave in two 30-second intervals, stirring after each. Stir until creamy. Remove the pan from the freezer and pour the mixture in an even layer onto the top. Make sure the caramel layer is firm before doing this.

Ingredients

3cans Pillsbury Buttermilk Biscuits (10 ct)
60pepperoni slices (2 per biscuit)
Block of cheese (Colby/Monterey Jack or Cheese Stick)
1beaten egg
Parmesan Cheese
Italian seasoning
Garlic powder
1jar pizza sauce

Directions


Slice cheese into approx. 28 squares (or if using cheese stix, cut in 3rds). Flatten each biscuit and stack pepperoni and cheese on top. Gather edges of biscuit and secure on top of 'roll'. Line rolls in greased 9x13 pan. Brush with beaten egg. Sprinkle with parmesan cheese, Italian seasoning & garlic powder. Bake at 425°F for 18-20 minutes. Serve with warm pizza sauce for dipping.
  

Easy No-Bake Nutella Cheesecake


This super amazing recipe I founded at http://www.piarecipes.com/ and I love it. It's so easy to prepare it. This is NO-BAKE Nutella cheesecake for everyone :)  Hope you enjoy it :) 


Ingredients:
  • 2/3 cup Nutella
  • 1 8 oz block Cream Cheese (room temp)
  • 1 tsp vanilla extract
  • 1 8 oz container non-dairy whipped topping (defrosted)
  • 1 Oreo Cookie Pie Crust
  • 1 bar chocolate (optional)
Instructions:
In a large bowl, mix Nutella and cream cheese together until well blended and smooth. Add vanilla extract. Fold in whipped topping until no white streaks are left. Pour into Oreo Pie crust. Refrigerate for at least 2 hours. Optional: Shave chocolate with veggie peeler on top of pie for garnish.

I found the original recipe online, but after a week of sharing it the link stopped working. The original recipe was for individual servings and took a lot more prep time and tools. I adjusted the recipe to make things faster and more child friendly. Also, if you want, you can make your own crust using chocolate wafer cookies or graham cookies and melted butter, instead of buying a ready made crust.

  • 200 g caster sugar
  • 5 eggs

  • 170 g plain flour (replace 3 Tbs flour with 4 Tbs cocoa powder)
  • 1 and 1/4 tsp baking powder
  • 170 g butter or margarine
  • 120 g caster sugar
  • 3 eggs
Ingredients for vanilla cream:
  • 500 g mascarpone cheese, chilled
  • 900 ml whipping cream
  • 3 Tbs icing sugar
  • 1 tsp vanilla paste 
In a mixer bowl put mascarpone and cream. Whipp until thick. Add sugar, vanilla paste and mix.
Additionally:
  • 300 g + 200 g blueberries
  • 2 packs forrest fruit jelly

Ingredients
  • 2 small sweet potatoes
  • 1 tbsp olive oil
  • coarse sea salt
  • 6 oz chicken breast, cooked and shredded
  • 3-4 tbsp bbq sauce (preferably all natural & low sugar)
  • 1 oz freshly crumbled goat cheese
  • thinly sliced green onion for garnish
Notes
To reduce cooking time, heat sweet potatoes in the microwave for 2-3 minutes before cooking. This usually reduces my cooking time to about 40 minutes.



Crockpot Chicken Tacos recipe

Ingredients:
4 Chicken Breasts ( I used frozen chicken tenders)
1 12 oz. jar salsa (I use old el paso)
1 package of taco seasoning (old el paso)

Directions:
Place all ingredients in crock pot and cook on low for 6 hours or high for 4 hours.  Remove chicken, shred or chop and return to crockpot.  Serve with warm tortillas, sour cream, salsa, & guacamole!

  • Dried ground mustard – 3 tbsp

Baked pizza bites recipe

The trick is to make sure to press the ends together so the cheese gets sealed in, otherwise it may all ooze out as it bakes. Brush with an egg wash or a little melted butter and sprinkle on some dried oregano. If you're feeling fancy you could add a slice of pepperoni to the insides too. Do your thing. Live your life. Then bake at 180°C/375°F for 18-22 minutes until golden brown. Serve hot with marinara sauce. Enjoy!

Kale and Blood Orange Salad recipe

Ingredients:
1 small bunch dino kale
4 small oranges
1 small shallot, very thinly sliced
high quality Extra Virgin Olive Oil
maldon salt or other large flake finishing salt

Method:
- Remove stems from kale (it's preferable to have a small bunch of dino kale, the leaves will be less bitter!)
- Wash greens, dry in a salad spinner or with paper towels and tears into manageable pieces.  Massage kale to soften it.  (more about massaging kale here
- Cut peel from 3 of the blood oranges and slice into rounds.
- Combine greens, shallot slices and oranges on a plate
- Drizzle with olive oil, squeeze the juice from the remaining blood orange over the salad and generously sprinkle finishing salt over the top.  Serve immediately!

To make this:

 — and let’s just pretend we’re making a portion big enough to serve 4
 — simply sear up enough scallops for 4 people until you get a nice crust on the outside of them without overcooking the inside. 
Then you set the scallops aside while cutting up half an English cucumber into matchsticks, slicing up thinly 1/2 a medium red onion (or 2 medium shallots), and sectioning 2 oranges. Toss everything together in a bowl. Add some lime juice and fish sauce to taste. Throw in some chopped up chilies and cilantro or mint leaves. Done.
