TURKISH KOFTA PLATTER recipe


This amazing recipe I founded at http://www.ladyandpups.com and I love it.This is a recipe for standard kofte. If you travel around Turkey, you will see meat köfte of various shapes and slightly different ingredients depending on the region you're in. Right, on with our recipe:

Ingredients:
  • Cannellini puree:
    • 2 cans of cannellini beans
    • 1/2 cup of thick Greek yogurt
    • 1 clove of garlic
    • 1 tbsp of tahini/sesame paste
    • 1/4 tsp of ground cumin
    • 1/4~1/2 tsp of salt
    • 1/4 tsp of ground black pepper
  • Lamb meatballs:
    • 500 g of ground lamb, or beef/pork
    • 3 cloves of garlic, finely minced
    • 1 shallot, finely minced
    • 1 tsp of ginger, grated
    • 1 small egg, or 1/2 large egg
    • 1 1/2 tbsp of corn starch
    • 1 tbsp of olive oil
    • 1/2 tsp of ground allspice
    • 1/2 tsp of ground cinnamon
    • 1/4 tsp of ground cumin
    • 1/4 tsp of ground coriander
    • 1/2 tsp of salt
    • 1/8 tsp of ground black pepper
    • 2 tbsp of water to drizzle in
  • 2 tbsp of extra virgin olive oil, plus more to drizzle
  • 2 tbsp of pine nuts
  • 1 clove of garlic, minced
  • 1 bunch of fresh mint, chopped
  • 1~2 tsp of chili flakes
