Zucchini Gratin Recipe

I also made this recipe without the breadcrumb topping and it was still awesome. The breadcrumbs add a different texture and a crunch but if you don’t have the breadcrumbs, you can still make this. Just add the grated cheese on top (no need for the butter if you don’t have the breadcrumbs). This amazing recipe I founded at Julie's site.


2 medium zucchinis, sliced thin about 1/4 inch
1 1/2 Tablespoon unsalted butter (and extra butter for greasing the baking dishes)
2 Tablespoons all-purpose unbleached flour
1/2 cup heavy cream
1/2 cup milk (I used 2% milk)
1 teaspoon Kosher salt
1/4 teaspoon black pepper
1/3 cup sharp white cheddar cheese, shredded
1/3 cup parmesan cheese, shredded

Breadcrumb topping

1/2 cup Japanese panko breadcrumbs
1 1/2 Tablespoon sharp white cheddar cheese, shredded
1 1/2 Tablespoon parmesan cheese, shredded
salt & pepper
1 Tablespoon unsalted butter, melted


Heat oven to 375 degrees F.
