Chicken Soup Recipe


Of the many soups that I prepare, this is by far the most popular in my family. I founded this amazing recipe at http://xawaash.com by A&L 

Ingredients:

(Tbsp is a tablespoon; tsp is a teaspoon)
(1 cup = 237 mL = 2.4 dl; 1 Tbsp = 15 mL; 1 tsp = 5 mL); all are level measurements
 
    Soup:


    • 5.5 oz (156 g) Chicken breast (skinless)
    • 2 Small Celery stalks
    • 1 Small Potato
    • 1 Small Onion
    • 1 Small Tomato
    • 4 Garlic cloves
    • 1 tsp (5 mL) Salt
    • 4 cups (2 litres) Water
    • 1 Small Carrot
    • ¼ cup (59 mL) Olive oil
    • ½ cup (70 g) All-purpose (plain) flour
    • 2 cups (474 mL) Milk
    • 1 tsp (5 mL) Honey mustard
    • 1 Tbsp (15 mL) Lemon juice
    • ⅓ cup (37 g) Parmesan cheese (grated)

    Garlic & Herb Bread Cubes:


    • 2 Tbsp (30 mL) Olive oil
    • 2 Garlic cloves (minced)
    • 2 Tbsp (30 mL) Fresh herbs (finely chopped)
    • 4 cups (135 g) Baguettes (cubed)
    • ¼ tsp (1.25 mL) Salt
