Kale and Blood Orange Salad recipe


This healthy and amazing salad recipe I founded at http://www.ahouseinthehills.com/ and I love it. It's so easy to prepare and fresh. Perfect for fit lunch after workout :)



Ingredients:
1 small bunch dino kale
4 small oranges
1 small shallot, very thinly sliced
high quality Extra Virgin Olive Oil
maldon salt or other large flake finishing salt

Method:
- Remove stems from kale (it's preferable to have a small bunch of dino kale, the leaves will be less bitter!)
- Wash greens, dry in a salad spinner or with paper towels and tears into manageable pieces.  Massage kale to soften it.  (more about massaging kale here) 
- Cut peel from 3 of the blood oranges and slice into rounds.
- Combine greens, shallot slices and oranges on a plate
- Drizzle with olive oil, squeeze the juice from the remaining blood orange over the salad and generously sprinkle finishing salt over the top.  Serve immediately!

  • FOR THE GARLIC CREAM SAUCE:
  • 1-½ Tablespoon Unsalted Butter
  • ½ Tablespoons Olive Oil
  • 3 cloves Garlic, Minced (or Use A Microplane If You Have It)
  • ½ cups Heavy Cream
  • ¼ cups 2% Milk
  • 1 pinch Salt
  • 1 pinch Cracked Black Pepper
  • 1 pinch Red Pepper Flakes
  • ¼ cups Parmesan Cheese, Grated
  • FOR THE NACHOS:
  • Your Favorite Crispy Tortilla Chips
  • ½ cups Garlic Cream Sauce (Recipe Included)
  • ¼ cups Onion, Diced
  • ½ cups Pepperoni, Cut Into Bite Size Pieces
  • ½ cups Black Olives Sliced
  • ½ whole Green Bell Pepper, Seeds Removed, Diced
  • 1 cup Colby-Jack Cheese, Shredded


Baked French Toast with Bacon Crumble recipe

Ingredients:

12 1.5 inch thick slices of white bread, or Texas toast, top of bread removed
1 stick of unsalted butter
1¼ cup of light brown sugar, plus 2 tbsp
4 egg yolks
6 eggs
2 cups of milk
1 tsp vanilla extract
1 tsp ground cinnamon
1 pinch of salt
8 slices of Nueske’s bacon (or your favorite), cooked and crumbled
Maple Syrup, optional
