Ingredients:
4 cups cooked day-old white rice
2 tbsp vegetable oil
1 (14 oz) pkg firm tofu, drained and cut into (1/2-inch) cubes
2 eggs, lightly beaten
1 cup sliced green onions
1 cup frozen peas and carrots, thawed
2 tsp minced garlic
1/2 tsp ground ginger
2 tbsp white wine or rice wine (whichever you have on hand)
3 tbsp soy sauce
1 tbsp hoisin sauce
1/2 tsp sesame oil
